Leading Mediterranean restaurant cuts energy costs and CO2 emissions,  paving the way for sustainable dining.

The restaurant scene in Mongolia has been evolving rapidly over the past decade, complementing the country’s rich cultural heritage with increasing global influences.

Choijin Cuisine LLC, a woman-owned and led enterprise and a subsidiary of the esteemed Choijin Temple LLC, has been delivering exquisite Mediterranean cuisine since 2016. With three successful restaurants, the company has quickly established itself as a preferred choice in Ulaanbaatar’s fine dining sector.

In light of rising energy costs and a commitment to maintaining high standards of quality and operational efficiency, Choijin Cuisine acknowledged the necessity of modernising the kitchen equipment at its newest branch. This upgrade not only enhanced food quality but also improved energy efficiency, significantly reducing the restaurant’s environmental impact.

The company’s investment decision encompassed the comprehensive renovation of its kitchen facilities. Choijin Cuisine collaborated with the GEFF team in the selection of new and efficient refrigerators, ovens, mixers, and more. This strategic initiative was designed to cut energy costs, expand culinary offerings, and enhance both business performance and environmental sustainability.

The investment was partially financed through a GEFF loan from Khan Bank, amounting to USD 104,310. With the implementation of the new equipment, the company has successfully reduced its annual energy consumption by 181 MWh.

The facility upgrade also decreased CO2 emissions by 74.2 tonnes per annum. This reduction constitutes a step towards mitigating the adverse effects of human activity on the climate.

The Green Economy Financing Facility (GEFF) in Mongolia is an initiative of the European Bank for Reconstruction and Development (EBRD), supported by the Green Climate Fund (GCF) and Japan to foster sustainable development.
